Salt, soy sauce, miso ---- seasonings no Japanese kitchen can do without. In this countryside, many things city dwellers take for granted must be made by hand. By standing in the kitchen or cooking around the traditional irori hearth of your heritage home, you can simulate preparing a wide variety of dishes and seasonings.
